Overview

Plan and manage the Restaurant, Room Service and other food and beverage outlets as appropriate in order to achieve customer satisfaction, quality service, compliance with corporate/franchise policies and procedures and federal, state and local regulations while meeting/exceeding financial goals.

Essential Duties & Responsibilities

Food & Beverage Operations

• Manage daily operations of restaurant outlets, lounges, bars, and room service across breakfast, lunch, dinner, and late-night service periods.
  
• Ensure consistent execution of luxury service standards while maintaining compliance with Marriott, HEI, and property SOPs and LSOPs.
  
• Monitor beverage and labor costs while supporting revenue growth initiatives and profitability goals.
  
• Forecast staffing needs and manage schedules to align with business demand and labor targets.
  
• Maintain menu, beverage, and service standards in partnership with Culinary and F&B leadership.
  
• Ensure all outlets maintain cleanliness, sanitation, maintenance standards, and regulatory compliance.
  
• Oversee inventory controls, purchasing practices, and cost-containment initiatives.
  

Nightlife & Entertainment Operations

• Lead evening and late-night operations including DJ programming, entertainment activations, and high-volume weekend service.
  
• Execute nightlife concepts, themed events, and branded activations aligned with hotel marketing and revenue strategies.
  
• Partner with PR, Marketing, Security, and Events teams to deliver safe, profitable, and elevated nightlife experiences.
  
• Manage floor operations during peak nightlife periods, ensuring crowd flow, guest experience, and service efficiency.
  
• Oversee VIP service execution, table service standards, and nightlife revenue opportunities.
  
• Coordinate entertainment logistics including DJ scheduling, vendor communication, and operational readiness.
  

Requirements & Qualifications

• Minimum 2-4 years Food & Beverage management experience, preferably within luxury hotel, restaurant, or nightlife environments.
  
• Experience managing high-volume bar or nightlife operations strongly preferred.
  
• Proven leadership experience supervising multi-outlet teams.
  
• Strong understanding of labor management, beverage operations, and revenue optimization.
  
• Knowledge of nightlife programming, entertainment operations, or event-driven service models preferred.
  
• Ability to work evenings, late nights, weekends, and holidays as business demands.
  
• Excellent interpersonal, communication, and conflict-resolution skills.
  
• Alcohol service certification required (TIPS or equivalent).
  
• Marriott or luxury hotel experience preferred but not required.
  

Compensation
Salary Range: $70,000.00 - $75,000.00 Annually
