Lakon Paris Patisserie is an award-winning modern French bakery known for its handcrafted croissants, creative viennoiseries, and innovative pastries that blend artistry with tradition. Lakon Paris has become one of Massachusetts’ most sought-after patisseries, with locations in Newton Highlands, Brookline, and Boston. Every pastry is made from scratch with premium ingredients, meticulous technique, and a deep respect for French craftsmanship. Position Overview

We are seeking a passionate, skilled, and creative Pastry Sous Chef to join our growing team. As Pastry Sous Chef, you will assist the Head Pastry Chef in daily production, innovation, and team management, ensuring that every product meets Lakon’s exacting standards of quality, taste, and presentation.

Responsibilities

  • Support the Head Pastry Chef in all aspects of pastry and viennoiserie production
  • Supervise, train, and motivate pastry team members
  • Ensure consistency, quality, and visual presentation across all products
  • Help develop new recipes and seasonal menu items that reflect Lakon’s creative identity
  • Maintain cleanliness and organization of the kitchen, ensuring compliance with food safety standards
  • Manage ingredient inventory, ordering, and production schedules efficiently
  • Contribute ideas to improve productivity and minimize waste

Qualifications

  • Minimum 3 years of professional pastry experience in a high-end bakery, hotel, or restaurant
  • Strong technical skills in pastry and viennoiserie (lamination, doughs, creams, glazes, finishing)
  • Proven leadership ability and positive team spirit
  • Excellent time management and attention to detail
  • Passion for French pastry tradition and innovation
  • Flexible schedule must be available for early mornings, weekends, and holidays as needed
  • Culinary degree or pastry certification preferred, but equivalent experience is welcome
