    • Job Summary

    J.Bones Barbecue is looking for a dedicated and skilled Pitmaster / Prep-Cook to join our crew. This is an overnight position , responsible for running the smoker, smoking meats to perfection, and setting the kitchen up for the next days service. If you take pride in your craft, know your way around a smoker, and love working with a team that values quality, this role is for you.

    Responsibilities

  • Operate and maintain smokers, grills, and related cooking equipment during overnight shifts.
  • Trim, season, and prepare meats for smoking and service.
  • Monitor pit temperatures and cook times to ensure consistent, high-quality results.
  • Slice and portion meats for service with precision and care.
  • Assist with preparing side dishes, sauces, and other menu items as needed.
  • Maintain a clean and organized pit / kitchen area, including equipment cleaning.
  • Follow all food safety, handling, and sanitation standards.
  • Work as part of the team to ensure the kitchen is ready for the next days service.

    • Qualifications

  • You must be self motivated and good with time
  • Experience with barbecue, grilling, or meat smoking strongly preferred.
  • Knowledge of meat cuts, trimming, and seasoning.
  • Ability to work overnight shifts (including weekends and holidays).
  • Physically able to lift 50 lbs and stand for extended periods.
  • Strong work ethic, reliability, and a passion for great barbecue.
  • Previous line cook or kitchen experience is a plus.
  • ServSafe Manager certificate a bonus
