Assistant Director of Operations

Assistant Director of Operations | Cotogna & Verjus (Quince & Co.)

Quince & Co. is seeking an experienced Assistant Director of Operations to support the leadership, performance, and day-to-day operations of Cotogna and Verjus . This role partners closely with ownership, the Director of Operations, General Managers, and culinary leadership to ensure operational excellence, financial discipline, and exceptional guest experiences across both concepts.

Key Responsibilities

Support and oversee daily operations at Cotogna and Verjus, ensuring consistent service standards and hospitality

Partner with General Managers to drive financial performance, including revenue, labor, and cost control

Assist with budgeting, forecasting, and financial analysis in collaboration with Finance and Operations leadership

Support hiring, training, coaching, and development of management and hourly teams

Ensure compliance with health, safety, and company policies

Identify operational opportunities and implement process improvements across both restaurants

Act as a leadership presence on the floor, supporting service, teams, and guest experience

Qualifications

3+ years of senior restaurant management or multi-unit leadership experience

Strong operational and financial acumen

Proven ability to lead, coach, and influence teams across multiple departments

Highly organized, detail-oriented, and collaborative

Flexible availability, including nights, weekends, and holidays
