The Nixtamal Operator is responsible for cooking, grinding, and preparing nixtamal according to company standards and regulatory requirements. This role requires strong attention to detail, mechanical aptitude, and the ability to work safely in a fast‑paced food manufacturing environment.

Key Responsibilities Regulatory & Safety Compliance

Follow all OSHA, EPA, FDA, HACCP, SQF, and plant‑specific regulations.

Wear required PPE and follow all safety procedures.

Use lockout / tagout procedures when necessary.

Support all food safety, quality assurance, and SQF requirements.

Nixtamal Production

Cook nixtamal and ensure pH and moisture levels remain within specification.

Operate and monitor two grinders using stone plates.

Run conveyors to transfer corn from reactors to grinders.

Learn to engrave and replace grinder stones when needed.

Monitor machinery temperatures and ensure they meet product specifications.

Start up and shut down equipment safely and correctly.

Quality Control

Inspect raw materials for defects (color, appearance, expiration, etc.).

Verify in‑process product meets specifications for color, appearance, diameter, and weight.

Track yield and develop strong cooking and evaluation skills.

Manage wastewater and ensure nejayote pH is within acceptable limits before release.

Documentation & Communication

Record batch details and cooking times on production boards.

Complete mixing logs and other required documentation accurately.

Report any product deviations or equipment issues to the Lead or Supervisor immediately.

Sanitation & Maintenance

Clean machinery daily according to sanitation standards.

Maintain a clean and safe work environment.

Other Duties

Perform additional tasks as assigned based on department and business needs.
