Culinary Lead

Chula Vista Resort is looking for an experienced professional to join our staff as a Culinary Lead . Our ideal candidate has experience in a supervisor role in a kitchen setting who enjoys working in a fast-paced environment and takes pride in delivering high-quality service and food to guests. Rate of pay is based on experience $14- $22 per hour.

Essential Duties and Responsibilities

• Monitor sanitation practices to ensure that employees follow standards and regulations
• Check the quality of raw and cooked food products to ensure that standards are met
• Determine production schedules and staff requirements necessary to ensure timely delivery of services
• Check the quantity and quality of received products
• Supervise and coordinate activities of cooks or workers engaged in food preparation
• Instruct cooks or other workers in the preparation, cooking, garnishing, or presentation of food
• Prepare and cook foods of all types, either on a regular basis or for special guests or functions
• Inspect supplies, equipment, or work areas to ensure conformance to established standards
• Plan, direct, or supervise food preparation or cooking activities
• Demonstrate new cooking techniques or equipment to staff
• Produce and serve all foods for Kilbourn City Grill, including : hot entrees, salad bar, sauces and soups.
• Work several different stations, including : prep, salad bar, carver, saute and buffet runner.
• Create the highest guest satisfaction possible by having a clean, organized, well stocked work area. Perform and complete other assigned duties.
• Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
• Determine, communicate, and monitor personal and department achievements and performance standards on a daily basis.

Experience :

Required- 1 year experience working as a chef in a fine dining restaurant

Preferred- 2 year experience as a chef in a fine dining restaurant in a supervisor role

The ability to work with other people effectively and with other staff positions is important.

Must be able to lift at least 20lbs.

Sitting, standing for an extended period of time.

Have full use of eyes and ears, full power of speech.

Walking, turning head and torso, bending arms, wrists, and fingers.

Mathematics - Must be able to do routine math calculations.
