Job Overview : We are launching a new high-quality fried chicken food trailer serving chicken sandwiches, tenders, and fries near the UPenn campus, and are seeking a full-time General Manager to oversee all daily operations, manage a small team, maintain food safety compliance, and drive strong service and sales performance. This role is ideal for someone who thinks like a business partner rather than an employee—profit sharing is included, giving the GM meaningful upside tied directly to store success. We are looking for a highly responsible, self-sufficient, and entrepreneurial individual who can operate independently, execute consistently, and help build the business from the ground up.
Responsibilities :
- Oversee full daily operations of the food trailer, including opening / closing, food preparation, service flow, and on-site decision-making.
- Ensure consistent execution of chicken sandwiches, tenders, and fries following brand quality and food safety standards.
- Hire, train, schedule, and supervise a small team; maintain a positive, efficient, and accountable work environment.
- Manage inventory, ordering, vendor coordination, and cost controls (COGS, waste, labor).
- Maintain trailer cleanliness, equipment functionality, and compliance with health department requirements.
- Drive or tow the trailer safely to and from its operating location and set up / break down each day.
- Handle customer interactions, resolve issues professionally, and uphold brand reputation.
- Track daily performance metrics, manage cash / POS reconciliation, and provide accurate operational reporting.
- Take ownership of performance targets and contribute to continuous improvements that grow the business.
Qualifications :
Philadelphia Food Safety Manager Certificate (required)2+ years of restaurant, food truck, or fast-casual management experienceStrong leadership skills with the ability to operate independently and make decisions without supervisionProven ability to manage small teams, maintain labor and food cost targets, and run efficient shiftsExperience with fryers, quick-service workflows, and high-volume service preferredExcellent communication, organization, and problem-solving skillsAbility to tow, park, and set up the trailer (training provided)Reliable, trustworthy, and comfortable being fully accountable for daily operationsEntrepreneurial mindset with a desire for ownership, growth, and long-term partnership
