Job Description
The Production Sanitation team member assists the Production department in complete processing and manufacturing of pizza dough. The Production Sanitation Associate is responsible for the cleanliness and sanitation of the Production department including the production machinery and the production rooms. The Production Sanitation Associate will practice proper cleaning / sanitation techniques and safety protocol. The Production Sanitation is expected to assist in the production and warehouse departments, as necessary, i.e., tray wash machine, dough cooler, automated (JLS) dough placer, spiral chiller, AMF mixer, Vemag dough divider, and cross-stacking / de-stacking of dough trays, when needed. Team Members are required to rotate to various positions [production room, dough cooler, and tray washer] throughout the shift.
Shift : Start time : 10 : 00am, 4 days / 10 hours. Availability any day between Monday through Sunday; rotating schedule.
Compensation : $20.00 / hour
RESPONSIBILITIES AND DUTIES
Production room and Dough processing
- Determine correct batch recipe to gather, measure and mix ingredients
- Ensure dough is delivered into rounder
- Record batch data and maintain proofing library
- Achieve and maintain dough certification
- Perform metal detector checkups, and dough temperature monitoring document accordingly
- Change dough sizes on dough divider, metal detector, JLS (dough bot) and ink jet, as needed
- Spot check dough ball weight for inconsistencies
- Check sifter tailings timely and record findings
- Report any irregularities to Supervisor and Manager
Dough cooler and Staging product for shipment
Remove trays from conveyor belt as trays enter cooler and cross-stack onto dolly, as neededCheck to ensure all trays of dough produced are properly labeledDown stack trays as dough temperature reaches target level and document, as neededRotate down stacked trays in coolerTransport used trays to washing area to be cleanedMonitor dough temperature and metal detector checksTroubleshoot automated equipment, when needed, such as stacker, dolly loader, and / or tray bufferTray wash area
Loads trays onto conveyor for cleaningMonitor gauges and settings to ensure water pressure, water temperature, and detergent levels consistently meet company standards determined to thoroughly clean and sanitize trays, record findingsConduct titration and / or chemical testing on tray washer equipment, as neededSanitation responsibilities including, Production equipment, and General cleaning tasks
Clean and sanitize dough divider, production mixers, production mixing bowls, dough rounder, and food contact conveyor beltsMaintain detailed cleaning / sanitation logs required for Food Safety Audit documentationProperly store all sanitation tools and equipmentClean flour silo infeed, as neededEnsure production’s and dough cooler’s floors are swept and dryEnsure proper floor drainage in production room (clean floor drains)Clean / Sanitize production room wallsClean overhead evaporator units by using spraying water to rinse out evaporator catch pansEnsure tray washer area is clean and sanitize as required by SOP guidelinesEnsure spiral floor and platforms are cleared of doughEmpty all dough waste containersEnsure trash and recycling in production rooms is disposed of daily and receptacles are cleaned and sanitizedSupport the production team by keeping production rooms and the site clean and sanitaryScrape waste dough from traysQualifications
High school diploma or GEDOne year of production or manufacturing experienceAbility to read / interpret production process materials, dough thermometers, gauges, and record dataMust be available to work during a shift which may be scheduled anytime during a 24-hour day, over any 7-day period, including holidaysMust be able to work in a cleaning / sanitation environment with water and other cleaning chemicalsMust successfully pass a background check every third year, on your anniversary datePHYSICAL REQUIREMENTS
Ability to stand, climb, and walk on a continual basis throughout shiftAbility to lift from floor to above the head, to carry materials weighing up to 50 lbs. frequently, and 75 lbs. occasionally, throughout work shiftMust be able to utilize PIT equipment, i.e. scissor lift, for cleaning the walls and ceilingsAbility to work in refrigerated conditions and non-climate-controlled conditions ranging from 33 to 90 degrees plus and work in environment with exposure to loud machinery, when necessaryAble to work with yeast and flour productsMust be able to climb up and down stairs and laddersMust be able to work wearing the Proper Protective EquipmentAdditional Information
