Position Summary
The Chef Manager provides oversight for all aspects of food production and preparation and handles the administrative and technical responsibilities for production staff (i.e. training, waste logs, etc.).
Essential Job Functions :
- Senior leader in the Dining Services department of Lily Brook.
- Provides management oversight of kitchen operation.
- Supervises day to day work activities by delegating authority, assigning and prioritizing activities and monitoring operating standards.
- Assists in maintaining food budget within department. To include forecasting of needs, managing left over logs and communicating to production staff. Utilizing food management for cafeteria costing.
- Works Senior Director of Dining Services to implement and sustain a menu and the supporting production systems.
- Oversees production staff training in culinary skills (i.e. knife / slicer training)
- Provides production relief, as needed. Display cooking and arrangement of specials with asst. director on weekly / monthly basis.
- Assists in continuous improvement areas of quality within the department via assisting in review and analysis of menu and customer satisfaction scores.
- Communicates any substitutions, shortages or out-of-stock items to management / production staff.
- Responsible for adherence to department Quality Assurance Standards. Completes food safety audit monthly.
- Performs other production responsibilities including salad and baking as needed.
- Completes production staff schedule.
- Completes production staff performance evaluations.
- Completes all food orders and maintains appropriate order guides.
- Completes the monthly inventory.
- Maintains the work area and equipment used in a clean and sanitary condition.
- Responsible for sanitation within cooking area; coordinates assistant director on major cleaning responsibilities and repairs as needed.
- Follows daily sanitation checklists. Conducts training of production staff on sanitation guidelines per department in-service schedule.
- Participates in in-service education, departmental meetings and safety programs of the Home.
- Performs other duties as required by supervisor or by Administration from time to time.

Education : Technical, trade or vocational school degree in culinary arts.Experience : Minimum of 3 years food production experience.Skills : Ability to read, write, do simple math calculations. Basic food knowledge and ability to apply it.Licenses / Certifications : Servsafe certification and / or County Sanitation certification preferred.Conditions of Employment :
