Castell’s is seeking a highly skilled Pastry Cook with a minimum of 5 years of professional pastry experience and strong technical and plating knowledge to execute our in-house dessert program at the highest level. This is a focused execution role within a precision driven, fine dining kitchen. Recipe development is not the primary function. Consistency, speed, and flawless presentation are mandatory.
Key Responsibilities
- Execute all house desserts exactly to spec with consistency and accuracy
- Daily mise en place, baking, finishing, and plating for service
- Maintain elite standards of presentation and portion control
- Handle service calmly under high volume and fine dining pressure
- Proper labeling, rotation, storage, and inventory awareness
- Maintain strict cleanliness, sanitation, and food safety standards
- Communicate effectively with pastry leadership, chefs, and management
- Support holiday, banquet, and private event dessert production
Requirements
Minimum 5 years professional pastry experience in high level kitchensAdvanced knowledge of pastry techniques : creams, custards, cakes, glazes, frozen desserts, chocolate work, etc.Strong plating, finishing, and visual presentation skillsProven ability to execute existing recipes with zero deviationHighly organized, disciplined, and clean workstation habitsDependable, punctual, and service focusedComfortable in a fast paced, high standards environmentFine dining background strongly preferred
