We are seeking an innovative and strategic Director of Product Development with a strong background in food manufacturing, packaging, and regulatory compliance. The ideal candidate is capable of turning consumer insights into successful products that meet the highest standards of quality, safety, and compliance. This role requires a balance of fast-paced visionary thinking and hands-on execution, with proven experience leading cross-functional teams and driving projects from concept to commercialization.
Position Summary
The Director of Product Development is responsible for all sales and market driven bread development and leading the strategy and execution of new breads from concept through commercialization. This role oversees all aspects of formulation, and packaging while ensuring strict adherence to regulatory and food safety requirements. The Director will partner with cross-functional teams to deliver innovative, cost-effective, and compliant breads that meet consumer demand and align with company growth objectives.
Essential Functions
Product Innovation & Development
- Lead the end-to-end product development process, from R&D to commercialization.
- Drive consumer-focused innovation while ensuring manufacturability, scalability, and cost-effectiveness.
- Optimize and establish enhanced cross-functional process for R&D development and commercialization.
- Oversee testing, formulation trials, sensory evaluation, and shelf-life studies.
Packaging Development & Optimization
Collaborate with Marketing and Creative Design Teams on packaging design, materials selection, and sustainability initiatives.Ensure packaging meets functional and regulatory requirements.Partner with suppliers to evaluate new packaging technologies and reduce costs while enhancing product quality.Partner with Supply Chain, Sourcing, and Operations to optimize raw material sourcing and cost position.Regulatory & Compliance Oversight
Ensure all breads and packaging comply with state regulations, FDA, USDA, allergen controls and labeling standards.Lead regulatory reviews, labeling approvals, and documentation for launches.Maintain awareness of changing food and packaging regulations to keep the company compliant and competitive.Cross-Functional Leadership
Collaborate with Operations, Quality Assurance, Supply Chain, Sales, and Marketing to align bread strategy and execution.Support Sales & Marketing with technical product knowledge, and samples.Manage day-to-day relationships with co-manufacturing partners, ensuring strong collaboration and alignment.Own timelines, budgets, and resources to deliver projects on schedule.Continuous Improvement
Identify opportunities to optimize processes, and packaging for efficiency and sustainability.Benchmark against industry trends and consumer insights to drive competitive advantage.Champions a culture of continuous improvement by integrating data-based decision-making and statistical evaluation into all phases of product development.Leadership & Cross-Functional Collaboration
Provide leadership, coaching, and development to R&D team.Partner with other functions to ensure alignment of product quality with customer expectations.Requirements :
Position Requirements
Bachelor’s degree in food science, Engineering, Packaging Science, or related field.8+ years of progressive experience in commercial food product development, with at least 4 years in a leadership role. Prior bread / baking experience or natural foods experience, preferred.Strong knowledge of FDA, USDA, FSMA, and international food labeling / regulatory requirements.Proven expertise in packaging development, sustainability, and supplier management.Understanding of scale-up from idea to launch, internal manufacturing etc.Experience leading cross-functional teams and managing multiple projects simultaneously.Experience in developing R&D and commercialization process to drive cross functional team success / improve launch process.Strong business acumen with the ability to balance innovation, compliance, and profitability.Excellent communication, negotiation, and leadership skills.Demonstrated ability to lead teams, manage multiple priorities, and drive results in a fast-paced environment.Excellent problem-solving, analytical, and communication skills.Core Skills

Compensation is based on the level of experience, other relevant experience, and requirements of the position. The range provided serves only as a guideline and does not automatically qualify all candidates (internal or external) for the high end of the range.
Base Salary Range : $145,000 to $175,000
