The Director of Food & Beverage will lead all culinary and beverage operations across the property, ensuring every dining experience reflects The Sunny’s warm, vibrant, guest-centered spirit. This role oversees restaurant operations, bars, in-room dining, banquets / events, and beach / pool service. The ideal leader is hands-on, strategic, passionate about service culture, and able to elevate both guest experience and operational performance in a dynamic, opening-phase environment.
Responsibilities
- Provide strategic leadership for all food & beverage venues, ensuring consistent delivery of elevated guest experiences.
- Oversee daily front-of-house and back-of-house operations for restaurants, bars, in-room dining, banquets, and outdoor outlets.
- Develop and implement service standards, operating procedures, and brand-aligned training.
- Lead, mentor, and motivate F&B leadership teams; drive a culture of hospitality, accountability, and continuous improvement.
- Manage P&L, forecasting, budgeting, labor management, and cost-control strategies.
- Partner with culinary leadership to ensure menu quality, innovation, and alignment with The Sunny brand.
- Oversee beverage programming including wine lists, cocktail menus, inventory management, and compliance.
- Ensure compliance with all health, safety, and alcohol regulations.
- Collaborate closely with Sales, Events, Culinary, and Front Office teams to support property wide initiatives and a seamless guest journey.
- Drive guest satisfaction scores, respond to feedback, and implement experience enhancements.
- Support pre-opening activities including hiring, training, vendor partnerships, operating supplies / equipment, and service design.
Qualifications
5–7+ years of progressive Food & Beverage leadership experience within luxury or lifestyle hotels / resorts.Proven success overseeing multi-venue F&B operations; pre-opening experience strongly preferred.Strong financial acumen with experience managing budgets, forecasting, and cost controls.Exceptional leadership and team-building skills with the ability to inspire and motivate diverse teams.Deep knowledge of culinary trends, beverage programs, service standards, and guest experience design.Ability to thrive in a fast-paced environment and adapt to evolving operational needs.Excellent communication, collaboration, and problem-solving abilities.ServSafe, TIPS, or equivalent certification preferred; Florida-specific alcohol certification a plus.Ability to work weekends, holidays, and long hours as business demands.Benefits
