Vallata NYC, part of Crafted Hospitality, the restaurant group founded by Chef Tom Colicchio , is seeking a talented and driven Executive Sous Chef to join our culinary leadership team. Inspired by regional Italian cooking and focused on seasonal, market-driven ingredients, Vallata is known for exceptional handmade pastas, Neapolitan-style pizza, and warm, genuine hospitality.

We are looking for a culinary professional with a passion for Italian cuisine and the ability to lead, motivate, and develop a team in a high-volume, high-standards kitchen environment.

Requirements

Proven experience with fresh extruded pastas (shapes, doughs, hydration, machinery, troubleshooting)

Hands-on experience with Neapolitan pizza production (dough fermentation, stretching, firing at high temp, oven management)

Applicants must have strong technical knowledge in both areas.

Key Responsibilities

Collaborate closely with the Chef de Cuisine on menu development, seasonal specials, ordering, and recipe execution

Lead kitchen operations during service, ensuring consistency, quality, and timeliness

Train, coach, and supervise all BOH team members; foster a positive and professional kitchen culture

Maintain accurate recipes, prep guides, and production systems

Uphold food safety, sanitation, and DOH compliance at all times

Assist with cost control, inventory, vendor relationships, and product sourcing

Support hiring, onboarding, scheduling, and performance management for the culinary team

Model leadership, communication, and teamwork daily—setting the tone for the entire BOH staff

Qualifications

Minimum 3–5 years BOH leadership experience, preferably in Italian or Mediterranean-focused restaurants

Strong knowledge of pasta production, dough fermentation, pizza techniques, sauces, butchery, and station mastery

Experience managing a fast-paced NYC kitchen and leading a diverse team

Excellent organizational, communication, and problem-solving skills

Commitment to hospitality, consistency, and a collaborative work environment
