Major / Essential Functions

• Assist Unit Manger in meat lab working with faculty and staff to meet the needs of internal and external stakeholders.
• Slaughter beef, pork, and lamb according to meat industry standards so that research data is valid. Procedure includes weighing, stunning, sticking, skinning, head removal and splitting of the carcasses.
• Assist Unit Manger in Developing student workers to be industry prepared to work in or with a USDA Inspected meat facility
• Comply with USDA Inspector in keeping facility clean, maintaining appropriate labels and ingredients for USDA approval. Records must be accurate and kept on a timely schedule.
• Duties include fabricating of carcasses or cuts and / or packaging as retail cuts for sale. Assist with meat sales through Raider Red Meats and outside companies.
• Participate and / or teach meat industry / youth short courses host by Animal & Food Science department.
• Assist Unit Manger with implementation HACCP plan in accordance with USDA regulations.
• Processing of meat products used for teaching and research ad converting them into retail products for sale
• Supervise 5-20 student assistants daily and production unit when unit manager is away

Required Qualifications

Bachelor's degree with some supervisory experience; OR a combination of education and / or supervisory experience to equal four years.
