About the Job
The Porter is responsible for maintaining the overall cleanliness, sanitation, and organization of the kitchen. This includes dishwashing, waste management, equipment cleaning, and supporting the BOH team to ensure smooth and efficient operations. The Porter plays a vital role in upholding health and safety standards and ensuring the kitchen is always clean, functional, and service-ready.
General Duties & Responsibilities
- Wash, rinse, sanitize, and store all dishes, pots, pans, utensils, and kitchen tools according to proper sanitation standards.
- Maintain clean dish pit areas, sinks, and dish machines throughout the shift.
- Ensure all dishware is returned to the correct locations
- Clean and sanitize kitchen surfaces, prep stations, equipment, and floors during and after service.
- Assist with deep cleaning tasks : ovens, hoods, filters, walk-ins, shelving, walls, drains, etc.
- Follow all cleaning schedules and checklists assigned by management
- Take out trash, recycling, and compost as needed throughout the shift.
- Ensure proper disposal, correct sorting, and regular swapping of liners.
- Maintain clean, organized waste areas inside and outside the building
- Assist cooks and prep team with retrieving equipment, moving items, unloading deliveries, and keeping walk-ins organized.
- Keep floors dry, clean, and safe at all times.
- Restock essential items : gloves, towels, sanitizer buckets, soap, paper goods, and cleaning supplies.
- Report any equipment issues or safety hazards immediately.
General Skills & Requirements
Ability to stand for 8+ hours.Ability to lift up to 50 lbs.Comfort working near heat, ovens, grills, and sharp objects.Ability to bend, reach, and move consistently throughout the shiftPrevious line cook or relevant kitchen experience (fast-casual, restaurant, or production kitchen).Ability to work in a fast-paced environment
