Pay : $19.00 – $22.00 per hour (DOE) + Tips
Trapper's Sushi is looking for an experienced and passionate Sushi Chef to join our team in Federal Way, Washington!

Position Overview
The Sushi Chef is responsible for preparing sushi rolls, nigiri, and specialty dishes while maintaining the highest standards of food quality, presentation, and sanitation. This position requires precision, creativity, and the ability to thrive in a fast-paced, guest-focused environment.
Duties and Responsibilities
Prepare sushi rolls, sashimi, nigiri, and other menu items according to company standards.
Ensure all ingredients are fresh, properly stored, and rotated according to FIFO practices.
Maintain a clean and organized workstation throughout service.
Follow all food safety and sanitation guidelines in compliance with local health codes.
Provide exceptional guest interaction at the sushi bar, offering menu suggestions and creating a memorable dining experience.
Collaborate with kitchen and FOH teams to ensure smooth service flow.
Assist with prep work, inventory, and restocking as needed.

Experience and Qualifications
1–3 years of sushi preparation experience preferred.
Excellent knife skills and knowledge of sushi preparation techniques.
Strong attention to detail, time management, and consistency under pressure.
Positive attitude and strong communication skills with both guests and team members.
Food Handler's Permit (WA State) required prior to hire.
Ability to work evenings, weekends, and holidays as needed.
Physical Demands
Stand for extended periods in a busy kitchen or sushi bar environment.
Lift up to 30 pounds occasionally (ingredients, containers, etc.).
Use hands and arms for repetitive chopping, rolling, and plating motions.
