Concessions Manager
This position oversees all Concessions events and the Scissortail Market at the Oklahoma City Convention Center. Under direction of the Food and Beverage Director, the Concessions Manager will stay in tune with current culinary trends, demonstrating innovation and a genuine passion for creative, high-quality food.
Essential Duties And Responsibilities
- Hire and train all Food & Beverage servers, cashiers, and bartenders.
- Plan, assign, and direct work for employees and non-profit groups.
- Supervise concessions employees, non-profit workers, bartenders, and beer-tenders during events.
- Ensure all concessions, bars and Scissortail market are properly stocked and staffed for each event.
- Maintain labor costs and meet budgetary goals.
- Attend internal event planning and coordination meetings to stay informed about upcoming events, operational needs, and client expectations.
- Relay real-time updates, changes, and critical information from meetings to all relevant departments to ensure alignment and preparedness.
- Serve as a communication bridge between the Food & Beverage team and other operational units to support smooth event execution.
- Collaborate with department leads to adjust staffing, inventory, and service plans based on updated event requirements.
- Ensure all concession-related changes are implemented promptly and accurately to maintain high service standards.
- Maintain cleanliness and ensure annual maintenance of all concession equipment.
- Comply with Health Department and ABLE Commission regulations.
- Develop creative marketing strategies, signage, and sales displays for concessions.
- Update and post menus on the digital menu board platform.
- Demonstrate strong attention to detail and consistency in all aspects of service.
- Maintain a hands-on presence with frequent interaction with staff and customers during events.
- Order products and equipment and manage uniform inventory.
- Oversee inventory control processes.
- Manage beverage ordering and receiving.
- Oversee inventory, sales, and operations for the Scissortail Market to ensure efficient daily operations and optimal customer service.
- Monitor product availability and coordinate timely restocking to maintain a well-stocked and visually appealing market environment that align with guest needs specific to events.
- Analyze sales trends to make data-driven decisions that enhance customer experience and maximize revenue.
- Perform other duties as assigned
Supervisory Responsibilities
Directly supervises multiple team members in the Food & Beverage Department. Carries out supervisory responsibilities in accordance with Oklahoma City Convention Center policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning assigning and directing work; appraising performance; rewarding disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems.

Education And / Or Experience
Requires at least 2 years of management experience in a concession facility servicing concessions for large events.Must be 21 years of ageMust have a high school diploma or GED equivalentKnowledge, Skills And Abilities
