Server Assistants are an essential part of the Kouklas dining experience. This role supports both the dining room and service team by ensuring tables are clean and organized, food is delivered accurately and efficiently, and guests feel cared for at every moment of their meal. Server Assistants work closely with servers, bartenders, and the kitchen to keep service flowing smoothly and at a high standard.
PRIMARY RESPONSIBILITIES
Dining Room Support
- Clear and reset tables promptly and properly throughout service.
- Maintain table cleanliness, including removing used plates, glassware, and debris without disrupting guests.
- Re-set tables with clean linens, share plates, polished silverware, and glassware.
- Assist servers with water service and refills when needed.
- Maintain a clean, organized, and fully stocked dining room at all times.
Food Running
Deliver food from the kitchen to the correct table and seat position with accuracy and urgency.Confirm that dishes match the ticket and presentation standards before leaving the pass.Announce dishes clearly and confidently when serving.Serve food in a consistent and professional manner, placing dishes thoughtfully and avoiding reaching across guests.Communicate immediately with the expeditor or kitchen if a dish appears incorrect or incompleteService Flow & Teamwork
Help create and maintain a proper “landing zone” for incoming food.Support family-style and shared dining by pacing dishes appropriately and limiting table clutter.Assist any section or team member once assigned responsibilities are complete.Anticipate service needs and act proactively rather than reactively.Communicate clearly and respectfully with servers, kitchen staff, and management.Side Work & Organization
Polish glassware, silverware, and share plates.Stock service stations, gueridons, and server areas throughout the shift.Assist with opening and closing duties as assigned.Maintain cleanliness of service stations, floors, and back-of-house pathways.KNOWLEDGE & EXPECTATIONS
Learn and understand the full menu, including ingredients, preparations, and allergens.Be able to describe dishes accurately when running food.Know table numbers, seat numbers, and dining room layout.Maintain awareness of guest allergies and special requests.Follow all safety, sanitation, and hygiene standards.PROFESSIONAL STANDARDS
