Wooden Pearl is a modern seafood and steak restaurant located inside the Anaheim Packing House. We focus on high-quality ingredients, elevated comfort food, and an exceptional dining experience. Our curated menu blends coastal cuisine with refined executionfeaturing oysters, surf & turf dishes, and a raw bar program. Were now expanding our offerings to include a boutique sushi menu and are looking for a talented Sushi Chef who can also support prep for our core kitchen operations.

Position Overview :

Were hiring a skilled Sushi Chef who is passionate about quality, creativity, and teamwork. This dual-role position will also involve back-of-house prep support , including shucking oysters, portioning seafood and proteins, and prepping vegetables, sauces, and garnishes for our full menu. Youll be an integral part of a small but dynamic culinary team.

Key Responsibilities :

• Prepare and execute a concise, high-quality sushi menu with daily mise en place
• Maintain cleanliness and organization of sushi station and raw bar area
• Shuck oysters and ensure proper handling of all shellfish and raw items
• Assist with general prep for surf & turf dishes, including proteins, vegetables, and sauces
• Uphold health and safety standards, including FIFO, labeling, and sanitation procedures
• Collaborate with kitchen team and management on specials and seasonal offerings
• Maintain product integrity and reduce waste through efficient prep
