The Sous Chef position at Love, Makoto in Washington, D.C., offers a dynamic opportunity to work within a high-end, multi-concept Japanese food hall. This venue, founded by renowned Chef Makoto Okuwa, features various dining experiences, including the upscale steakhouse Beloved BBQ , the quick-service concept Love on the Run , and the sushi-focused Dear Sushi .

Key Responsibilities

Leadership & Team Management : Assist in leading and mentoring kitchen staff, ensuring a cohesive and efficient team environment.

Culinary Excellence : Maintain high standards of food quality and presentation, adhering to the restaurant's vision of refined Japanese cuisine.

Operational Support : Oversee daily kitchen operations, including inventory management, ordering, and ensuring compliance with health and safety regulations.

Menu Development : Collaborate in the creation and execution of seasonal menus, incorporating traditional Japanese techniques with modern influences.

Training & Development : Provide training to kitchen staff, fostering skill development and a deep understanding of Japanese culinary traditions.

Ideal Candidate Profile

Experience : Minimum of 2 years in a leadership role within a high-volume, upscale kitchen environment.

Skills : Proficient in Japanese culinary techniques, including sushi preparation, fish butchery, and rice cooking.

Leadership : Demonstrated ability to lead, train, and inspire a team, maintaining composure and efficiency during service.

Passion : A genuine enthusiasm for Japanese cuisine and a commitment to delivering exceptional dining experiences.
