Cook Position

As a Cook at Chicken Express, your role revolves around preparing and cooking a variety of flavorful items with a focus on quality and consistency. Responsibilities include managing kitchen equipment, maintaining cleanliness, and collaborating with the team to meet customer expectations. Job Duties :

  • Fryer Management :

Conduct fryer safety procedures, including cold starting and filter maintenance.

  • Set fryer temperatures (330°ree;F for chicken and fish, 350°ree;F for side fryers).
  • Marination Process :

    • Prepare marination by mixing marination mix, salt, water, and ice in designated tubs.

  • Schedule draining and completion times for marination.
  • Fryer Designation for Food Safety :

    • Manage specific fryer duties, including load quantities, cook times, and stirring intervals.

  • Filter Maintenance :

    • Sift flour before and after every load of chicken and after every two tenders.

  • Change filters every two loads for fryer and grease maintenance.
  • Grease and Side Fryer Management :

    • Change side fryers after lunch and dinner rushes.

  • Product Marination :

    • Marinate tenders, chicken, livers / gizzards, and fish following specific procedures.

  • Batter Process :

    • Prepare batter by adding batter mix and cold water to the batter pan.

  • Monitor and change batter as needed.
