divh2Fire Camp Kitchen Manager/h2pA professional Cook/Manager is to lead our kitchens at fire camp following our Mobile Food Service Managers specifications and guidelines. A successful candidate will employ their culinary and managerial skills in order to play a critical role in maintaining and enhancing our customers satisfaction. The Fire Camp Kitchen Manager is to be a team leader and provide organizational guidance in the kitchen. Must be able to work in all types of extreme weather conditions. Must be able to serve and organize preparation and service of food for large numbers. Must have all necessary certifications up to date./ppDuties include but are not limited to:/pulliKitchen Manager and Supervisory Cook at Fire Camp/liliEnsure all kitchens, salad bar, and beverage trailer are set up properly upon arrival at fire camp and torn down properly prior to departure from fire/liliLead by example: Lead the kitchen team to enforce compliance of Government Contract/liliBe familiar with current government contract specifications for each job./liliEnsure all employees are following proper health and sanitation practices/liliSupervise Kitchen Staff, work with the MFSU Manager to coordinate employees and set schedules/liliMaintain kitchen cleanliness and organization/liliUpdate temperature logs in all kitchen/liliWork with MFSU Manager and Inventory Manager on all food orders/liliCollaborate with Executive Chef (Owner, Bryan Scofield) to set menus prior to Fire Season/liliCommunicate necessary menu changes with MFSU Manager promptly/liliWork with Mobile Food Services Manager to resolve kitchen employee issues, discipline, hiring, and firing/liliEnsure MFSU equipment is cleaned, organized and dispatch ready prior to fire season and at fire camp/liliReport to Executive Chef or MFSU Manager any kitchen equipment that is not working/liliQuality Control of product to be maintained at all times/liliCoordinate food inventory with Inventory Manager and with Vendor coordinating with Bryan./liliTrain new kitchen staff/liliCook on the line to fulfill orders/li/ulpSkills/Qualifications/pulliProven food service and leadership experience/liliHigh degree of accuracy and attention to detail/liliAbility to work as part of a team/liliMaintain a positive and professional approach with coworkers and customers/liliBe highly organized with the ability to follow a daily routine/liliTrustworthy/liliPrevious experience with government contracts preferred/liliAdaptability: this job takes place on-site, often in remote locations with little notice/liliProblem solver/li/ulpRequired Certifications/pulliServeSafe: Food Manager Certification/li/ul/div
