DO YOU GWC THIS ROLE? (GET IT - WANT IT - CAPACITY TO DO IT)
WHAT YOU OWN - YOUR RESPONSIBILITIES
- Prep your mise en place before every service — fully stocked, fully ready, zero excuses
- Execute all recipes to spec: right portion, right temp, right presentation — every time
- Communicate with expo and fellow cooks clearly and calmly during service
- Follow all food safety and sanitation standards: FIFO, temp logs, clean station
- Break down your station completely and clean thoroughly at the end of every shift
- Flag low inventory before it becomes a problem — don't wait until you're out
- Cross-train on every station in your section — versatility is part of the job
- Support prep cooks and contribute to team prep during slower periods
WHAT THIS ROLE IS NOT
- Sending out a plate you wouldn't eat yourself
- Hiding a mistake instead of calling it out and fixing it
- Leaving your station for the next cook to deal with
- Going rogue on a recipe because you 'think it's better'
