Tortilla Station Team Member

Position Summary
The Tortilla Station Team Member is responsible for preparing fresh tortillas and supporting the kitchen team to ensure every order is prepared quickly, accurately, and according to our quality standards. This position requires attention to detail, cleanliness, organization, and the ability to work efficiently in a fast-paced restaurant environment.
Key Responsibilities
- Prepare fresh flour and/or corn tortillas according to restaurant recipes and standards.
- Prepare tortilla dough, portion dough balls, press or roll tortillas, and cook tortillas to the proper size and consistency.
- Maintain appropriate tortilla production levels throughout the shift based on business volume.
- Ensure tortillas are fresh, properly cooked, and ready for dine-in, takeout, delivery, and catering orders.
- Monitor ingredient levels and communicate when additional supplies are needed.
- Follow proper food handling, sanitation, and food safety procedures.
- Maintain a clean and organized tortilla station throughout the shift.
- Clean tortilla presses, cooking equipment, utensils, work surfaces, and surrounding areas.
- Properly label, date, rotate, and store ingredients using FIFO procedures.
- Minimize food waste by following proper portioning and preparation standards.
- Assist with additional food preparation and kitchen duties when needed.
- Communicate effectively with cooks, expediters, managers, and other team members.
- Follow opening, shift-change, and closing procedures for the tortilla station.
- Immediately report equipment problems, food-quality concerns, or safety issues to management.
Qualifications
- Restaurant or kitchen experience preferred but not required.
- Tortilla-making experience is a plus.
- Ability to learn recipes, preparation procedures, and portion standards.
- Ability to work quickly while maintaining quality and accuracy.
- Dependable, punctual, and able to work as part of a team.
- Ability to follow instructions and maintain a positive, professional attitude.
- Willingness to work evenings, weekends, and holidays as scheduled.
- Must follow all restaurant food safety and sanitation requirements.
Physical Requirements
- Ability to stand and work for extended periods.
- Ability to work around hot cooking surfaces and kitchen equipment.
- Ability to bend, reach, lift, and perform repetitive hand and arm movements.
- Ability to safely lift and carry approximately 25–50 pounds as needed.
Performance Expectations
Success in this position means consistently producing fresh, properly cooked tortillas, keeping the station clean and stocked, minimizing waste, following food-safety procedures, and helping the kitchen deliver orders accurately and on time.
