Job Purpose
Supporting the day-to-day operations of the Production facility the meat cutter ensures proper portioning and flavor in our meat per our Company standards. The Meat cutter uses “Every Guest Matters” mentality. This position works with a diverse group of guests as well as internal team members.
Essential Functions

Activities and responsibilities includes, but not limited to:
- Prepares the kabob, Tarna y Shawerma according to the Company portions and quality standards.
- Must be able to carve, trim and portion meat
- Clean cutting and carving equipment and work area
- Minimize waste of products
- Rinses and cuts raw food products
- Receives and stores food supplies and equipment
- Inspects purchased meat for freshness, quality and conformity with purchase orders by means of accepted food management methods and techniques to either accept or reject such meat
- Mantanin dishes and other wares
- Maintains work area in a clean, sanitary and safe manner
- Cleans, organizes and maintains walk-in refrigerator, reach-in refrigerator, cooler drawers, prep area and tools, and dry storage area.
Meat Cutter Accountability
- Understands and complies with all food safety (hand washing, cross contamination) temperature standards and uniforms.
- Ensures that produce is being cut and portioned to company standards
- Process orders with accuracy
- Notifies a Manager immediately if a Guest or Team Member is injured or has a complaint
- Rotates product per “First in, first Out” to maintain shelf-life standards
- Notifies supervisor, logs, and discards all product not used by the end of the “use by” date
- Communicates with Team Members and management throughout the shift regarding status of orders and availability of product
- Participates in other activities that may include ordering, detail cleaning, etc.
- Available to work all hours, weekends and holidays.

Working Conditions
This job operates in a fast-paced environment with some exposure to smoke, steam, high and low temperatures and humidity. Works well under pressure and can react quickly to changes in environment or customer demand.
Physical Requirements
Mobility is required during the entire shift and stands on feet for long periods of time. This would require the ability to reach, bend, squat and frequently lift and move up to 50 lbs.
Must be capable of using knives, slicing equipment, and other food preparation equipment/tools
Ability to work in a constant state of alertness and safe manner.
Travel & Relocation
Travel is not necessary, other than meetings or training in the greater L.A. area. Relocation to other company Restaurants may be needed on a temporary or permanent situation. No overnight stay will be required.
Supervisor Responsibility
This position has no supervisory responsibilities.
